Carolyn's Kitchen Summer Holiday Giveaway

Hi Apronistas! This Giveaway is SURE to get you in the Holiday mood! Are you ready??




How perfect is this Apron to get you ready for summer and all your picnics, potlucks and holiday parties? One lucky winner will recieve not only the Americana Apron but the matching gloves as well!

And my favorite summer recipe is zucchini and yellow squash, sliced into little round slices, marinated in some Italian dressing, then cooked on the grill. YUM!!

My favorite summertime recipe is iced coffee slushies. I freeze coffee in ice cube trays then blend with more coffee, milk, agave (sweetener), chocolate syrup or vanilla extract and mmmmm
Way cheaper than Starbucks! :)

My favorite apron is the Dorothy Breast Cancer pink apron! I love the polka dots and even more that she would donate a portion of the sales to the breast cancer foundation. A very dear friend just went through that. It means a lot.

One of our favorite summertime recipes is for Homemade Orange Julius.

1 6-oz can frozen orange juice
1 cup water
1 cup milk
1/2 cup sugar
12 to 16 ice cubes

Blend in blender till smooth. Serves 6
Enjoy!

OH MY ... My little pretty ... which one to choose? I really love the Good ole Red White and Blue it is truely beautiful... but when I clicked on your web site and saw the Garden Party I about fell out of my chair... I just love I mean love Yellow.

My Family Likes;)

CORN SALAD
1 Can Yellow Corn
1 Can White Corn
1/2 Cup Sliced Radishes
1/2 Cup Chopped Celery
1/2 Cup Diced Green Peppers
1 Tablespoon Peminto
1/4 Cup Sweet Pickle Relish
1/4 Cup Mayo
2 Tablespoons Sweet Pickle Juice
Salt and pepper to taste

To make Salad...
Mix together
corn (drained), radishes, celery, green peppers, peminto, and sweet pickle relish.

Dressing:
combine Mayo, sweet pickle juice.

Chill veggies.. added dressing right before serving.. so your veggies stay crunchy. Enjoy

Oh, my goodness! It is so hard to decide but I really love-love-love the Dorothy Apron in aqua. It is beautiful...
My favorite recipe for summer is stuffed jalapenos>>
24 large jalapenos-cut tops off and core out membrane and seeds.
Stuffing>>4 oz. cream cheese, softened
1 c. shredded cheddar cheese
1/2# sausage, browned and drained
2 T. diced pimentos, drained
1/4 c. finely chopped onion
Stuff each pepper full.
I used to always stand these up in a casserole--make fit snug so they stand up. Now they actually make racks that hold these up very nicely. Bake at 350' for 35-40 minutes. These are great party appetizers but are even great cold!

I love the Americana! I could just see me wearing it all summer, for our picnic guests. I love to cook, I always do my father's special potato salad recipe, and fruit dip (so easy and good)
1 cream cheese block
1 jar of fluff
lemon juice, add until smooth.

Ok - now it's time for my:

Deviled Eggs - They are FANTASTIC!

I don't measure, that's the problem...

So boil your eggs, cut all in half and scoop out the yolks

Combine yolks with about
2 TBS good mayo (my personal favorite is Hellmans)

1 TBS yellow mustard (again my fave is Frenchs')

Then the secret is 2 tsp of very finely minced onion, it totally kicks it up!

Then add a little dill relish and salt. Mix up very well.

I fill my eggs with a pastry bag and wide star tip. If I don't have one, I cut the end off of a ziploc, it saves the mess!

They are best when allowed to chill and the onion can realy soak in, but who can wait that long!

Favorite summer recipe....The Pink Stuff, of course!

1 tub cool whip
1 small can pineapple tidbits
1 pint strawberries (washed and cut into bite-sized pieces)
1 16 oz. container small curd cottage cheese
1 box sugar free strawberry jell-0
1 banana

Dump cottage cheese into bowl - add jell-o mix and stir together.

Add drained pineapple and strawberries. Stir together.

Add cool whip and gently fold until combined.

Refrigerate for a few hours (overnight is even better). When ready to serve, slice banana and add it in - voila - the Pink Stuff!

Try this even if you're not a fan of cottage cheese - you'll like it!

My favorite summertime food would have to be "Beer Can Chicken". One whole chicken (about 5 lb)...rub it all over with a spicy rub...put a beer can (we use a soda can) about 1/2 filled with water into the opening of the bird so that the bird can "stand" on the grill. Grill over indirect heat for about 1.5 hrs. It is WONDERFUL. The skin is crispy and spicy and full of flavor (the kids always want me to include some skin on their pieces!) and the meat is juicy and delicious.

And here's a recipe for an easy summertime cake using fresh strawberries.

Strawberry Cake
1 pkg. White Cake Mix
3/4 Cups Wesson Oil
4 Eggs
1/2 cup Strawberries
1 pkg. Strawberry Jello
Mix and bake cake ingredients at 350 for 35-40 minutes.

Icing:
1 Box Powdered Sugar
1/2 Cup Strawberries
1 Stick Butter
Mix icing ingredients & ice cake.

Sue and Gloria's Baked Beans
Recipe courtesy Sue Mittelman and Gloria Zucker

Recipe Summary
Difficulty: Easy
Prep Time: 25 minutes
Cook Time: 1 hour
Yield: 12 servings

4 (16-ounce) cans baked beans
1 (20-ounce) can crushed pineapple, drained
1 cup molasses
1 cup BBQ sauce
2 tablespoon yellow or brown mustard
5 slices cooked bacon, crumbled
1 (6-ounce) can french-fried onions, crushed
Salt and freshly ground black pepper


Preheat oven to 350 degrees F.
In large bowl, mix together beans, pineapple, molasses, BBQ sauce, mustard, bacon, and a third of the onions. Add some salt and pepper, to taste. Pour beans in 9 by 13-inch casserole dish and sprinkle remaining crushed onions and bacon on top. Cook in oven for 1 hour or until beans brown and bubble. Serve warm.

Interestingly enough, I printed out a picture of the Dorothy apron in pink a few months ago as color inspiration for a little girl's dress. It remains one of my favorites but I love the sweetheart apron in pink polka dots, too!

I almost forgot about the recipe! I made this recipe the other night for book club and it was a big hit! It was adapted from a recipe in last month's "Domino" magazine.

Strawberry Cream Pie

2 lb strawberries, reserve 3 for garnish, hull the rest
3 T lemon juice.
1 ¼ cup milk
6 T Cornstarch
¾ c. sugar

Graham cracker pie shell (the bigger one)

2 cups whipping cream
2 T confectioner sugar

Puree the strawberries (not the reserved ones!) in a blender or food processor with the lemon juice. Combine cold milk, cornstarch and sugar in saucepan. Whisk until well blended and sugar is dissolved. Stir in pureed strawberries. Cook over med-high heat for 6-7 minutes until bubbly and thick. Pour into pie shell and let cool completely on counter. Cover and refrigerate overnight.


Before serving, whip cream with sugar until stiff. Spread over pie and garnish with remaining strawberries (you can slice them or chop them, whatever you feel like.) Be sure to keep refrigerated until serving. It gets soft quickly.

My favorite summer recipe is my cookies and pudding recipe. It's a huge hit here, and every time my husband even THINKS about it, he wants me to make it!

1 1/2 cups cold water
1 oz box vanilla instant pudding
1 reg size cool whip
1 box vanilla wafers

In small bowl, combine water and pudding, then beat well. Refrigerate for 5 minutes.
Fold in whipped cream and layer in large bowl: pudding mix/cookies/pudding mix. Refrigerate overnight to soften cookies or eat sooner for crunchier cookies!

My favorite summer recipes involve the crock pot!! Who wants to turn on the oven in the summer? My favorite is too easy. Get a pork roast and throw it in the crock pot with two cups fresh salsa and one cup brown sugar. Cook on low all day. Serve on tortilla's with cheese, sour cream, and avacado. YUM!

I live in Southern California and it gets really hot here most of the year, so I love to eat ice cream and fruit smoothies.

As a super easy summer dish, I like cucumber slices marinated with sliced red onion, wine vinegar, a bit of sugar and salt, and alot of fresh dill. Yummy!!

Whoops! Tried to post this yesterday and got kicked off the internet. :-P

Truthfully, my favorite summer food is Watermelon, but for the sake of something more original I will elaborate on my favorite summer meal, Gazpacho (and yes, that was my sister Felicity who mentioned it earlier).

Gazpacho

Cut into bite sized pieces a variety of your favorite raw vegetables, e.g. tomatoes, cucumbers, carrots, bell peppers, olives, avacados, etc. Put a spoonful of each in a soup bowl and poor in V8 tomatoe juice. To add a little extra pizzazz try some tabasco sauce or spicy salsa in it as well.

It would be hard to pick just one but I love the Garden Party Apron! My favorite summer food - Greek Salad made with garden picked tomatoes, cucumbers, sweet onions and basil. Add some fresh feta, olive oil, vinegar, salt and pepper and serve with freshly baked french bread and away you go! We eat it all summer long!
